Peel and very thinly slice 2 baking potatoes. Put slices into a bowl of cold salted water for 15 mins, or over night but add some lemon juice and chill if leaving over night. This helps potatoes crisp up later.
Drain and rinse potatoes well. Blot as dry as possible in a clean tea towel. Put into clean dry mixing bowl. Spray potato slices with 12 sprays sunflower oil, tossing as you go so that slices are evenly coated with oil.
Transfer to the air fryer. Use the whole area of air fryer and pre heat to 190 C. Air fry for 18 mins, shaking basket or tossing slices twice during cooking. Finally air fry at 200c for 1 to 2 minutes until crisp and golden. Serve immediately sprinkled with salt.
