Chicken with Parmesan - Air Fryer

A great alternative to fish fingers. Great to serve with salad serves 2)


240g chicken breast mini fillets, or 2 small chicken breast fillets.1 medium size egg 4 Tbsps plain flour 4 Tbsps Panko breadcrumbs 1 Tsp Fajita seasoning Salt and pepper 30g finely grated parmesan cheese Spray oil


1. Blot chicken strips dry between sheets absorbent kitchen paper. 2. In a shallow, wide cereal or soup bowl, beat the egg. In a second similar bowl, combine flour and breadcrumbs with the Fajita seasoning, a little salt and pepper and the Parmesan. 3. Working in 2 batches, dip the chicken into the beaten egg and then into the breadcrumb mixture to coat on all sides. Transfer to a large plate and continue with remaining chicken. Chill for 15 minutes. 4. Pre-heat air fryer to 200C. Spray basket with a little spray oil, rhen spray tops of eash prepared chicken piece with 3 sprays spray oil. Arrange chicen in air fry, not quite touching, and in a single layer. Air fry at 200C for approximately 10 minutes, turning each piece after 6 minutes. 5. Serve
